Egyptian Walking Onions are a magnificent perpetual onion variety, they don't make huge bulbs that store well, they are however a "harvest anytime" onion.
Most onion varieties have a specific window when they can be planted and harvested, often leaving huge holes in the harvest season when there simply aren't any home grown onions to harvest, so you need to spend money at the stores for expensive bulbing onions.
Enter the Egyptian Walking Onion, this onion does not produce flowers, but rather small top-sets where the flowers should be. These top-sets fall over and plant themselves, this is the famed walking, as the plant is able to move along the bed a good 30-50 cm each season.
The added benefit is that the onions themselves also split, so a single onion becomes 10 in a period of 6 months or so.
The trick with walking onions is to harvest a bunch, pull two onions off and plant them, use the balance in your cooking. If you do this every time you harvest you will ALWAYS have fresh onions in the garden for home use.
The entire onion is used, from the slight bulb, all the way up to the leaves.
These onions have an ancient history and this was one of the staple crops fed to the Jews when they were building the pyramids and enslaved by the Egyptians.
