Pachyrhizus erosus

 Also known as the Mexican Turnip or the Mexican Potato.

NOTE: The only edible part of the Jicama bean is the root, everything else above the ground is toxic.

The tubers are the size of a turnip and have a yellow to brown coloured skin. The creamy flesh is crisp and juicy and has a sweet and nutty flavour.

Can be eaten raw,boiled or my personal favourite in stir-fries.
