The food of kings, artichokes are typically served either as a whole immature flower or just the hearts. We think it’s just an excuse to pig out on loads of garlic butter!

These artichokes yield a lot of 'flesh' in the leaves and the heart. They are easy to grow and extremely decorative anywhere in the garden. Cook in water with a bit of salt until the leaves come out when pulled. Then eat warm, dipping the lower half of a leave in vinaigrette and take of the flesh with your teeth. Discard the strawy stuff underneath the leaves, then enjoy the heart. That is the typical French way and so much more delicious than the canned stuff that you find on your pizzas. Artichokes are very healthy. They are an antioxidant and good for your liver.
