Solanum melongena
A highly recommended variety introduced in 1964; one of many developed by Professor Elwyn Meader of the University of New Hampshire. The Apple Green eggplant produces an abundance of small, light green fruits which resemble green apples. This mild-flavoured brinjal is non-acidic, does not need peeling, and is a very good producer even in a cooler environment. When left on the plant for too long they will turn yellow and lose their remarkable flavour that they have become famous for. Pick your eggplants when they are shiny, and waxy looking - approximately 5cm across when ripe. As soon as they lose their shine, they are overripe.
