These carrots show their ancient heritage because they do not have root shear. Root shear is a trait that has been bred into modern carrots that allows the side roots to break off on harvesting, only leaving little eye scars of the skin. This makes for an easy to harvest and process carrot. Siyah Havuch does not have this trait, so you need to spend a little extra effort to get to the glorious purple roots.

The carrots are best cooked whole and then cut, this ensure that you do not lose any of the precious immune boosting anthocyanins in the carrots. When cut the white core contrasts beautifully with the deep purple outer core and makes for a stunning display on your plate.
