Crisphead Crisphead lettuces are normally know as as Iceberg lettuce, characterised by very tight heads that are crisp and crunchy. These are most often exchanged in dishes calling for a romaine or cos lettuce. They can tend towards bitterness especially in high temperatures and moisture stress.
