Triticum dicoccon
An ancient grain that is thought to be one of the first culitvated grains. A great source of Vitamin B, Fibre, Iron, and Zinc. Also high in protein and low gluten, making this an attractive grain for people with wheat and gluten sensitivities.
It can be used as a substitute for rice, to make a delicious risotto or can be added to soups and stews, adding a sweet and nutty flavour.
The berries can also be ground into a flour for baking, or to make homemade pasta.
