This endive is AKA Italian Dandelion Chicory because of the leaves resembling dandelion leaves and In Italy, as Catalogna frastagliata. An Italian staple that is a prolific producer of emerald green coloured, long, leaves that grow upright. Delicious and tender in salads, steamed or sautéed. Raw the leaves have a flavour similar to asparagus. If left to bolt, beautiful and edible blue flowers are formed.
