Flint Corn
Flint corn is also known as Indian corn, it has a hard outer covering that protects the soft endosperm. This hard covering is really hard and has been described as "hard as flint". Most often seen as multi-coloured corn cobs that are used in traditional recipes both locally and in the U.S.
However there are many flint varieties that are a single colour. Flint corns are best used as a base to make pap or maize meal, and it also makes and excellent animal feed. Actually all corn makes an excellent animal feed.
Flint corn can also be popped, however it does not pop in exactly the same way as popcorn does and the kernels tend to split open rather than pop.
Due to Flint corn's hard outer coating it is less often a target for pests.
