Brassica oleracia
A very old collard variety known from the early 1800s, and a staple in the Southern States of the USA. Known as Borecole in South Africa, this is an open headed, bolt resistant variety that can take the summer heat quite well. A great producer of large bluish-green, tasty and tender leaves, gets to around 40-50cm tall. The flavour of this variety will improve when the leaves experience colder temperatures.
This variety is usually enjoyed steamed, boiled or stir-fried.
