Alpinia galangal

There are two main types of Galangal, the greater and the lesser.

This year we have the greater galangal on offer. This is the larger of the two, it is more pungent with a strong peppery-pine scent and flavour. Originally from the island of Java, greater galangal is used either fresh or dried and ground-up in much the same way as ginger.

The robust flavour of galangal is perfectly paired with Thai, Malaysian and Indonesian cooking as well as often being used as an Eastern medicinal herb.
