An old Italian heirloom from Florence. Costoluto refers to the flattened, heavily fluted shape typical of so many Italian tomatoes.
This large beefsteak variety is an early producer of deep, rich-flavoured fruit with low acidity. The unusual-looking fruit draws some attention in the garden, but not as much as it does in the kitchen. Slow roast these heavily ribbed beauties to obtain a superbly rich sticky paste for the most mouthwatering sauce in true Italian style.
