Capsicum annuum

Hailing from Mexico, one would expect a fairly high heat profile. This pepper is sweet and mild with a medium heat. Can be used unripe as a green chilli or when completely ripe and a rich chocolate brown. Dried pods are used in the making of the traditional Mexican 'Mole' (sauce) or used green to make Chilli Rellenos where the pepper is stuffed with cheese, rolled in flour and beaten egg and pan fried.
