Althaea officinalis
A perennial herb found in North Africa, West Asia and parts of Europe. Marshmallows were originally made using the mucilage from the roots to thicken this delicious and once healthy sweet, this was replaced with gelatin in the modern marshmallows.
There are many health benefits from consuming all parts of this versatile herb. The leaves and roots contain mucilage which can be used to soothe inflamed membranes, from sore throats to irritable stomachs, and even skin abrasions and insect bites.
The leaves, although a bit fibrous, have a mild flavour and can be eaten raw, chopped finely in salads or added to stews and soups where they serve as a great thickener.
The flowers and roots can also be used to make a tea.
The plant grows to approximately 120cms tall, with a pretty show of white-pink flowers.
