Cynara scolymus

These are superb artichokes! This Italian variety is more tender and has a larger nibble at the base of each bract (nope, they are neither leaves nor petals). This variety is also more resistant to higher temperatures so should do better in the warmer parts of the country than the standard green variety.

The most common uses for artichokes are in salads, steamed, in a dip, on pizza, or cooked into casseroles.
