Cynara cardunculus
Ivory White Cardoon is a semi-self blanching variety, which equates to a less bitter taste. The edible stalks are a beautiful light green to ivory colour with indented green leaves.
Pick the stems and leaves when still young for the mildest, sweetest flavour. Typically cardoons have a similar flavour to artichokes, becoming more bitter with maturity. The stunning bright lavender flowers make quite a show in the garden throughout the summer months.
Cardoon is often used in soups, stews and salads.
