Cucurbita maxima

This pumpkin is not really an edible pumpkin; it is used mostly for its seeds, as they are “naked” pumpkin seeds, and for carving and decoration. They do not have the hard covering on them like other pumpkin seeds and this makes them the best for “pumpkin nuts”. “Pumpkin nuts” are roasted pumpkin seeds that make a great snack and are delicious in muesli and rusks. These pumpkins grow to about bowling ball size and can last up to 3 months on the shelf. The pumpkin seeds are healthy and nutritious.
