Rumex sanguineus
A beauty of a leaf. Stunning pointy light green leaves with deep red veins with a distinctive sharp and tangy lemon flavour. When young the leaves are nice and tender for salads, however when they mature they become a bit tough and are best used like spinach or in stir-fries. They pair well with fish, veal, eggs and potatoes, and are delicious in soups.
