Capsicum chinense
This is a rare and unique variety originally from the Amazon. The compact bushes are great producers of long crinkly looking pods that start off green and ripen to a beautiful creamy white. Do not be fooled by the innocent look of these chillis, they are hot and demand a little respect. Has classic habanero, chinense flavouring with a citrus lemon undertone.
Makes for an awesome dried powder, add to sauces, jams and for use in everyday cooking. The pale colour makes it a good additive to chicken or fish dishes without influencing the colour of the dish.
