Hordeum vulgare
A beautiful and unusually coloured ancient grain that has a delicious nutty, rich and distinctive flavour, typical of heirloom grains.
Because the hulls are only loosely attached to the kernels, they are easily removed by hand, leaving the bran, endosperm and germ in tact. This ensures a higher oil and nutritional value. A great source of fibre, protein, calcium, iron, potassium and zinc.
Barley can be used to ground into a flour, as a substitute for rice in soups, stews, barley risottos and pilaf.
