Solanum melongena

These small, deep purple brinjals grow in clusters on the plant, sometimes resembling a hand. They can be harvested when finger sized or left to get bigger without sacrificing the sweet, mild flavour and texture. With their thin skin and sweet, tender flesh, they require less cooking time than most.

Best harvested when young, under 10cms and glossy. This variety can be stir-fried, grilled and even pickled.
