Tragopogon porrifolius
Purple Salsify or Oyster plant is one of the lesser known root crops. The name 'Purple Salsify' describes the flower colour, the roots are a pale cream. It does indeed taste like oysters (maybe slightly sweeter). A long season crop that will benefit from winter chills to improve the oyster flavours. Thin plants to 5cm apart and use the small 'thinings' in salads roots leaves and all. Can be used as a side dish, a starter dip or in soups. Do not try to lift them without the use of a fork.
