Radicchio di Treviso is the quintessential Italian heirloom. They need to be blanched as you would for endives. Can be eaten raw, used to spice up a winter salad, stewed, or used in lasagne and risottos. Alternatively tone down the flavour by grilling or baking and serve as a side for fish and meat dishes.
