This cultivated relative of the (often weedy) nut-sedges is one of the oldest domesticated plants in Africa, and a true heritage crop. Grown by the Egyptians, dried “nuts” (actually tubers) have been found in the tombs of pharaohs! Imported into Spain by the Moors, it forms the basis for a drink called Horchata da Chufa, a huge industry in that part of the world, and of interest as a non-dairy milk substitute. Valencian chufa even has a protected region of origin designation in the EU, similar to Port and Sherry wines and Feta cheese.

Homemade Horchata is raw, vegan, paleo, and nut-free because, despite their other common names, tiger nuts are not actually nuts at all, but prolific tubers formed by a small grass-like plant. True chufa differs in many ways from the common nut-sedges. The tubers formed are much larger, are clustered close to the rhizome, are sweet in taste and have very little fibre. The plants also seldom flower, which means you need to save dried tubers every year to replant.

The crop is becoming known worldwide as a superfood, with numerous claimed health benefits, they are relatively high in protein and trace elements.
