Scorzonera hispanica
A truely unique vegetable. This has a unique flavour all on it's own. Traditionally a European crop, it is now cultivated worldwide as a gourmet dish. A verstile root crop, it is servies in soups, roasted, dipped in batter and deep fried, or served in a similar manner to asparagus either fried in butter or with a white sauce.
The skin is inedible, and is best removed after boiling for 15-20 minutes,
