Named after the town in Italy where they were first grown, San Marzano Sul Sarno in the Campania region, these tomatoes became famous in the early 1800s for pizza sauces and are considered one of the official tomato varieties used in Italy for authentic Neapolitan pizza.
The elongated, fleshy fruits are a top pick among chefs for making the best sauces. With their low juice content, when boiled down and strained, they make an impeccable paste that can be canned or frozen.
