Tetragonia tetragonioides

Also known as Cooks Cabbage. It has a similar flavor to lettuce and can be used in salads, pastas, soups etc. This spinach is high in Vitamins and nutrients, and anti-oxidants. It is noted that it can be hard to grow, but especially in warmer weather, chilling the seeds for 2 weeks and then soaking them overnight assists with good germination.

Harvestable 60 days from transplant.

Grows and grows with zero attention! When the plant is young, the leaves are delicious picked and eaten raw. As the plant matures I find the leaves get a little more bitter, and are better cooked. No pests - not even the mousebirds who eat anything I grow including my spinach - bother it. Stir frys, omelettes, salads, mixed with spinach/chard in sauce, all delicious.

My very very favorite veggie! Very easy to grow, no pest or disease, wonderful ground cover. self seeds but not invasive. And most important, super yummy raw in salad or cooked like spinach (but better than spinach). It is crispy, juicy with a fresh flavor when raw. It has a strong spinach taste when cooked but without the bitterness that spinach can have.
Note : if you eat a large cooked portion, your next pee might be blue, don't panic ;-)
Not sure if it is a succulent but behaves as such, you can multiply them by just sticking a stem in the ground, doesn't need much water, the more you neglect it the better it thrives.
