Phaseolus  lunatus

An old family heirloom traced back to 1887 when the Whitesitt family brought this small podded Lima bean to Montana from Kansas. This rare and versatile pole lima bean that can be picked young for crisp, sweet, thin skinned pods or eaten as shelly beans if left a little longer. Dried beans add an exceptional creamy texture and buttery flavour to soups and stews.
