Psophocarpus tetragonolobus

Also known as asparagus peas, winged beans are light green in colour and elongated with four ribs that have a peculiar feathering on them. The pods are usually harvested young before the peas have developed. They have a sweet, almost asparagus-like flavour and a crunchy texture. Delicious cooked or raw, they can be used as French beans or as peas. The entire plant is in fact edible, from the leaves, flowers, and stems, right down to the tasty tubers.
