Chicorium intybus
“Witloof” means white leaf, it has a delicious unique and tangy flavor. This variety of chicory is easy to grow .Its leaves are tightly packed and they need to be blanched for the yellow colour, but it can be used without blanching it. There isn’t one certain way to cook this type of chicory, it has a million ways. It is mostly used in hot dishes but occasionally in salads as well. They are a long harvest crop and take 9-10 months to grow…..but it’s worth the wait.
