Chicorium intybus
“Witloof” which means white leaf, is quick and easy to grow as a salad green. It adds a delicious, unique tang to salads. The same plant can be used to produce 'chicons': The roots are stored and then "forced", producing a compact head of blanched, creamy, crisp, sweet leaves. Quite a process....but worth the wait.
Harvest at around 60 days for salad greens and up to 160 days for 'chicons'.
